But labour supply quickly outgrew demand, and jobs became scarce for the thousands of newcomers arriving in the city. Slums developed and both serious and petty crime grew at an appalling rate.George Clarke was a butcher who wanted to make extra money to help his family and himself, and took up boxing to that end. He was strong and talented and his reputation grew, but he fell in with the wrong crowd.One of his new friends talked him into robbing his employer of all the household goods she owned in order to pawn them for £20.

He was caught, and although he offered up a bill of sale in defense he had misspelled his employer’s first name on it and was convicted of grand theft.His Majesty commuted his sentence and he served a period on one of the aging boat hulks on the Thames before being shipped off to Australia. After a treacherous journey across the Atlantic and Indian Oceans he finally reached Port Jackson along with 200 other convicts.Most were sent to work on chain gangs building the infrastructure of roads and buildings for Sydney and towns beyond. George’s profession held him in good stead and he was posted to a remote site 35 miles out of Sydney at Mulgoa near the foot of the Blue Mountains.In a total anomaly for the region Sir John Jamison had established an incredible estate at Mulgoa on the Nepean River, called Regentville.

The estate covered 2000 acres and ran cattle and sheep, grew grains, tobacco and grapes, and employed nearly 100 convicts to keep it running. The mansion was immense with nine bedrooms for guests, games rooms, stables, separate cookhouses and laundry, and quarters for servants. George was appointed to run the estate’s butchery.He served there some 12 years, and over time received his Ticket of Leave and Conditional Pardon.

He was well liked by Sir John and all the workers and married one of the servants from the main house. Ann was from Ireland and her whole family worked on the estate. She and George started a private Butcher Shop in nearby Penrith, a town which grew into a city and a major staging point for people and goods moving back and forth across the Blue Mountains.George loved the Australian bush and was a dedicated father to six children. Two sons followed in his footsteps and became butchers in their own right after both parents died.

While George never fully freed himself from the guilt of his original crime, he died happy, convinced that life In Australia was much better than it would have been back in London.
